I was truly having a moment when my friend Lily, the owner of Luli Roasts’ shared a meaningful idea, “what is your dream life?” Or what moments in life make up your dream life? Your dream life could be many things… like a dream bite.

When we talked about the combination of buttered toast or any form of dough with butter and a cup of coffee. The taste is transcending. There’s something about how butter mingles with the maillard reaction from the crust of baked bread or a toasted slice and merges with the bitter, fragrant cup of coffee. This dream bite made me JUMP out of my seat and scream YES!!!!

This combination of coffee and buttered toast is sweet, salty, bitter and sour. Hot, cold, crisp, soft. So many textures and flavours coming together. What a f-ing grand way to start the day, with a party in my mouth.

If there is nothing but busy-ness to start the day with, there is always bread, butter and coffee to look forward to. 🌞

Today, my happiness came in the form of Luli Roasts’ hawker hustle brew and a homemade toast loaf smeared with a honey butter sugar spread and caramelised.

I want to share my favorite toast bread loaf recipe. I am not an expert in bread, I’ve tried many ratios and different techniques to try and achieve a chewy, soft, moist loaf, but I always fall back on this. I am a person who enjoys a fresh loaf of bread without requiring a crazy amount of skill, so this is simple. It doesn’t require crazy ingredients and doesn’t require much technique - mix, proof, shape. It is however, very high in hydration which keeps it moist, soft and chewy - try not to add too much additional flour, the coiling method during proofing usually helps with this and I use a bench scraper to push the dough on the table while shaping it with flour.

Finally, to enjoy, I zhush up the toast and make honey buttered toast!

The ingredients for the loaf are simple:
Japanese bread flour that has ~ 12% protein
Skimmed milk powder
Water
Salt
Instant Yeast
Sugar
Butter, my butter of choice is Pamplié

Equipment for making loaf:
450g loaf pan from Sanneng
Bench scraper
Mixer with dough hook
4 qt cambro container (for proofing or a bowl is fine)
Weighing scale


Honey Butter Toast Spread Recipe
120g unsalted butter
60g granulated sugar
10g brown sugar
30g honey
3g sea salt

This recipe yields enough for 5 pieces of toast
Mix butter, sugar and honey and salt until it becomes a smooth paste.
Cut bread into 1” thick pieces and spread butter sugar mix onto 5 pieces of toast.
You can either bake it on broil or toast it butter side down in a pan.
I find that toasting it in a pan yields a nicer bread texture as baking it may crisp up the bread too much. The thickness is necessary to keep the bread moist while baking!
